OBSERVED THE INTERIOR OF THE FRYERS, IN BETWEEN COOKING EQUIPMENT AND THE WOK STATION WITH ACCUMULATED FOOD DEBRIS AND GREASE. OBSERVED THE GASKETS OF ALL PREP COOLERS WITH ACCUMULATED FOOD DEBRIS. INSTRUCTED TO CLEAN, SANITIZE AND MAINTAIN.
OBSERVED FLOORS IN THE CORNERS, UNDER/AROUND THE SINKS, DISH MACHINE, COOKING AND COOLING EQUIPMENT IN THE FRONT AND REAR PREP AREAS WITH DUST AND FOOD DEBRIS. INSTRUCTED TO CLEAN AND MAINTAIN FLOORS THROUGHOUT. -WALLS AROUND THE COOKING/COOLING EQUIPMENT, SINKS AND STORAGE RACKS WITH FOOD, DIRT AND DUST BUILD UP. INSTRUCTED TO CLEAN AND MAINTAIN WALLS THROUGHOUT.
