CUTTING BOARDS WITH DEEP/DARK GROOVES MUST BE REPLACED. All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair.
FLOOR DRAINS & AREAS UNDER HEAVY EQUIPMENT MUST BE FREE OF DEBRIS/DIRT. The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair.
FILTERS AT HOOD OF ALL COOKING EQUIPMENT & VENT ABOVE DISHMACHINE MUST BE KEPT CLEAN. The walls and ceilings shall be in good repair and easily cleaned.
WATER LEAK AT BOTTOM PIPE OF 1-COMP SINK BY COFFEE STATION, MST BE FIXED. Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health.
ALL MOPS/BROOMS MUST BE STORED CLEAN & HUNG TO DRY (NOT ON THE FLOOR). Cleaning equipment shall be properly stored away from food, utensils, equipment, and clean linens.
