FOUND DOORS NOT RODENT PROOFED AS REQUIRED TO AVOID RODENT ENTRY. THE BASEMENT SIDE DOOR AND THE BASEMENT OVERHEAD DOOR ON BOTH SIDES WHERE THE DUMPSTERS LOCATED. MUST RODENT PROOF ALL DOORS.
MUST CLEAN AND MAINTAIN THE FOLLOWING: EXTERIOR SURFACES OF LARGE POTS, COOKING BURNERS, STOVE, FRYERS, WOK STATION, REFRIGERATION UNITS, INTERIORS OF REFRIGERATION UNITS, PREP TABLES, STORAGE SHELVES, BULK STORAGE CONTAINERS, STEAMERS AND SINKS.
FOUND THE ENCLOSED DISPOSAL AREA NOT MAINTAINED IN THE BASEMENT AREA OF THE BUILDING. GREASE FROM THE GREASE RECEPTOR WAS ON THE FLOOR AROUND THE UNIT, GREASE WAS OBSERVED ON THE OUTSIDE AREA OF THE UNIT, SOME GARBAGE WAS ON THE GROUND AROUND THE DUMPSTERS. INSTRUCTED TO CLEAN AND MAINTAIN AREA.
CLUTTER OBSERVED ON THE OUTSIDE PORCH CONNECTED TO THE REAR KITCHEN AREA; ORGANIZE AND MAINTAIN; REMOVE UNNECESSARY ITEMS FROM AREA.
OBSERVED A HOLE IN THE WALL UNDERNEATH THE DISHMACHINE IN THE KITCHEN; SEAL HOLE. OBSERVED HOLES IN THE WALL ALONG THE STAIR CASE LEADING TO THE DISPOSAL AREA; SEAL ALL HOLES. OBSERVED SOME CEILING VENTS IN NEED OF CLEANING IN THE KITCHEN; CLEAN VENTS WHERE NEEDED TO REMOVE DUST/DIRT.
THE WALLS AROUND AND BEHIND VARIOUS KITCHEN EQUIPMENT AND THE FLOORS UNDER COOKING EQUIPMENT, SINKS, STORAGE SHELVES, DISPOSAL AREA NEED DETAIL CLEANING TO REMOVE TRASH, FOOD PARTICLES, GREASE ETC. CLEAN AND MAINTAIN FLOORS AND WALLS. ALSO CLEAN ALL FLOOR DRAINS IN KITCHEN AND MAINTAIN.
INSTRUCTED THE PERSON IN CHARGE THAT ALL FOOD HANDLERS MUST OBTAIN THE REQUIRED FOOD HANDLER TRAINING.
