Found the following potentially hazardous foods a improper temperatures in the refrigerated drawers under the grill: 3lbs of chorizo @ 61.8f (valued at $15); 3lbs of shredded chicken @ 50.3f ($6); 2lbs of pork @56.2f ($5); and 4lbs of sautéed mixed vegetables (squash, peppers, etc) @ 49.5f ($8). Instructed all potentially hazardous foods must be kept @ 40f or less (or @ 140f or higher for hot). Operator voluntarily discarded denatured foods during inspection. Critical violation 7-38-005(a).
Found rear prep exposed hand sink without soap. Advised all hand sinks must be stocked with soap, hot/cold water and paper towels, at all times. Operator provided soap during inspection. Found front prep exposed hand sink blocked and inaccessible (ice machine positioned directly in front of handsink. Drain line connected to hand sink piping.) Instructed to either move ice machine, or positioning of hand sink so that it is accessible at all times. Critical violation 7-38-030.
Found several items stored directly on the floor throughout kitchen, dry storage and in walk in cooler. Instructed all items must be elevated at least 6 inches from the floor.
Found employee with open toed shoes. Instructed all employees must have closed toed shoes at all times.
