OBSERVED TOP SHELF OF TWO LARGE BREAD SHELVES IN THE MAIN BAKING AREA INADEQUATELY PROTECTED FROM DUST AND OTHER DEBRIS FROM THE PREMISES. INSTRUCTED TO PROVIDE OVERHEAD COVER OR OTHER SOLUTION TO ADEQUATELY PROTECT BREAD ON TOP SHELF OF BREAD SHELVES FROM DUST DEBRIS AND OTHER CONTAMINATION AND MAINTAIN.
OBSERVED FOOD EMPLOYEES WAREWASHING AT THE 3-COMPARTMENT SINK WITHOUT PROPERLY RINSING EQUIPMENT AFTER WASHING AND PRIOR TO SANITIZING STEP. INSTRUCTED TO PROPERLY RINSE ALL EQUIPMENT FOLLOWING WASHING AND PRIOR TO SANITIZING STEP DURING WAREWASHING IN ORDER TO ENSURE CLEANING CHEMICALS ARE REMOVED AND MAINTAIN.
