OBSERVED THE RINSE THERMOMETER ON THE HIGH TEMP DISH MACHINE IS NOT WORKING. NOTED THAT THE GAUGE WAS NON-RESPONSIVE DURING THE RINSE CYCLE. DURING ONE CYCLE, A THERMAL STRIP WAS USED AND READ GREATER THAN 180 DEGREES, WHILE THE RINSE GAUGE ONLY SHOWED APPROX. 110 DEGREES. INSTRUCTED FACILITY TO PROVIDE AN ACCURATE RINSE GAUGE. SERIOUS VIOLATION: 7-38-030
OBSERVED PAPER AND PLASTIC CUPS BEING USED TO DISPENSE BULK INGREDIENTS IN DRY STORAGE. INSTRUCTED TO PROVIDE SCOOPS WITH HANDLES.
OBSERVED BOXES OF FOOD PACKAGING SUPPLIES BEING STORED ON THE FLOOR IN THE DRY STORAGE AREA. OBSERVED MAINTENANCE MATERIALS BEING STORED ON THE FLOOR IN THE FRONT ELECTRICAL CLOSET. INSTRUCTED TO STORE ALL SUPPLIES AT LEAST 6 INCHES OFF THE FLOOR.
OBSERVED AN UNFINISHED SECTION OF THE WALL IN DRY STORAGE SURROUNDING A PIPE. INSTRUCTED TO REPAIR THE WALL.
OPERATOR UNABLE TO PROVIDE DOCUMENTATION THAT ALL FOOD HANDLERS MEET MINIMUM FOOD HANDLER REQUIREMENTS. INSTRUCTED THAT ALL FOOD HANDLERS MUST MEET MINIMUM FOOD HANDLER REQUIREMENTS AND MAINTAIN DOCUMENTATION OF CERTIFICATION ON SITE AT ALL TIMES.
MUST REMOVE EXCESS CONSTRUCTION MATERIALS (PAINT, LIGHTS, WIRING, ETC)FROM THE FRONT CLOSET, ELECTRICAL ROOM, THE PRIVATE PARTY ROOM AND NEAR THE BACK KITCHEN DOOR.
