All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. OBSERVED PREP AREA CUTTING BOARD SURFACE WITH DARK PITS AND REACH IN PREP COOLER (UNDER SAME CUTTING BOARD) RUBBER GASKETS RIPPED. MUST REPAIR AND MAINTAIN DAMAGED GASKETS AND REPLACE DAMAGED CUTTING BOARD.
The walls and ceilings shall be in good repair and easily cleaned. OBSERVED WALL PANEL LOOSE FROM WALL BY COOKING EQUIPMENT AND FOOD DEBRIS ON WALLS BEHIND AND AROUND 3-COMPARTMENT SINK. MUST CLEAN AND MAITAIN ALL UNCLEAN WALLS AND REPAIR/REATTACH LOOSE WALL PANEL.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. DIPPER WELL WATER DISPENSER LOOSE FROM SIDE. MUST REATTACH TO SIDE OF DIPPER WELL/HAVE ELEVATED FROM TOP OF WATER LINE.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. OBSERVED PLASTIC CRATES ON FLOOR IN DRY STORAGE ROOM USED TO ELEVATE ITEMS OFF FLOOR. MUST REMOVE CRATES AND PROVIDE ADDITIONAL SHELVES, MUST BE ABLE TO CLEAN FLOOR UNDER AND AROUND ALL ITEMS.
