FOUND MEAT STORED DIRECTLY IN GROCERY BAGS IN THE DEEP FREEZERS IN THE BASEMENT. INSTRUCTED TO USE FOOD GRADE STORAGE BAGS TO PROPERLY PROTECT MEATS.
MUST DETAIL CLEAN INTERIOR AND EXTERIOR EQUIPMENT INLCUDING ALL REFRIGERAITON/FREEZER UNITS, MICROWAVE, EXTERIOR COOKING EQUIPMENT, PREP TABLES, CUTTING BOARD, AND DRY STORAGE RACKS TO REMOVE FOOD SPLATTER, BUILDUP, AND DEBRIS.
MUST DETAIL CLEAN THE WALL BEHIND THE 3-COMPARTMENT SINK AND BEHIND THE COOKING EQUIPMENT TO REMOVE HEAVY FOOD SPLATTER AND BUILDUP.
OBSERVED 2 LARGE STOVES USED TO COOK SOUP NOT DIRECTLY UNDER THE HOOD. INSTRUCTED TO RE-POSITION COOKING EQUIPMENT TO ALLOW ALL EQUIPMENT TO BE STORED DIRECTLY UNDER THE HOOD VENT.
OBSERVED A 1/2 INCH OF CONDENSATION ON THE BOTTOM SHELF OF THE COLD-HOLDING UNIT FROM THE CONDENSER NOT PROPERLY CONTAINING AND REMOVING CONDENSATION FROM COOLER. NO FOOD ITEMS WERE STORED ON THE BOTTOM SHELF AND OBSERVED NO FOOD ITEMS ON THE 2ND SHELF IN CONTACT WITH CONDENSATION. INSTRUCTED MANAGER TO REMOVE FOOD ITEMS AND REPAIR REFRIGERAITON UNIT.
FOUND A PILE OF EMPTY BOXES AND RUBBISH ITEMS IN THE BASEMENT. INSTRUCTED TO DISCARD UNECCESSARY ITEMS AND RE-ORGANIZE EQUIPMENT AND STORAGE TO PREVENT PEST/RODENT HARBORAGE AREAS.
