OBSERVED 13 RAT DROPPINGS UNDER ROASTING OVEN AND ALONG BASEBOARD UNDER RICE COOKER. INSTRUCTED MUST REMOVE AND SANITIZE ALL AREAS AND RECOMMEND HAVING PEST CO. TREAT FOR RATS. ALSO NEWLY INSTALLED SCREEN DOOR MUST BE TIGHT FITTING ON ALL SIDES.
All food not stored in the original container shall be stored in properly labeled containers. ALL PREPARED FOODS IN WALK IN COOLER MUST BE LABELED AND DATED.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair.MUST NOT USE PLASTIC GROCERY BAGS FOR ALL FOODS STORED IN COOLERS.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily.INTERIOR OF PREP COOLER MUST CLEAN AND REMOVE ALL ACCUMULATED FOOD DEBRIS ON HINGES AND INTERIOR COOLER DOOR.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair.FLOORS IN THE FOLLOWING MUST CLEAN, REMOVE ACCUMULATED GREASE AND FOOD DEBRIS: FLOOR IN THE DRY STORAGE ROOM, UNDER THE WOK STATION AND UNDER AND AROUND ROASTER, UNDER PREP COOLER.
