OBSERVED POTENTIALLY HAZARDOUS FOODS (RANCH, MAYO) AT IMPROPER COLD HOLDING TEMPERATURES; 1/2 LB OF CHEESE AT 48.9F, 1/2 LB OF GUACAMOLE AT 53.4F, 2 CONTAINERS OF MAYO AT 52F-71.1F AND A CONTAINER OF RANCH DRESSING AT 70F. INSTRUCTED MANAGER TO DISCARD AND DENATURE SAID ITEMS AND TO MAINTAIN ALL COLD HOLDING POTENTIALLY HAZARDOUS FOODS AT 40F OR BELOW AT ALL TIMES. CRITICAL VIOLATION 7-38-005(A).
OBSERVED HANDSINK BLOCKED LOCATED IN THE REAR FOOD PREP AREA, AND NO SOAP FOR THE WASH BOWL LOCATED IN THE WASHROOM. INSTRUCTED TO NEVER BLOCK A EXPOSED HAND SINK AND ALWAYS MAINTAIN SOAP IN THE WASHROOM AT ALL TIMES. MANAGER CORRECTED ALL DURING THE INSPECTION. CRITICAL VIOLATION 7-38-030.
