OBSERVED WIPING CLOTHS USED IN THE KITCHEN TO WIPE COUNTER SURFACES STORED ON THE TABLE; INSTRUCTED TO STORE CLOTHS IN A SANITIZING SOLUTION WITH THE PROPER PPM FOR THE SOLUTION USED.
FOUND NO SINK STOPPERS FOR BOTH THREE COMP SINKS ON PREMISES; MUST PROVIDE AN ADEQUATE AMOUNT OF SINK STOPPERS FOR BOTH SINKS. FOUND THE RUBBER GASKETS AT THE TWO DOOR PREP COOLERS IN POOR REPAIR; INSTRUCTED TO REPAIR OR REPLACE GASKETS WHERE NEEDED.
MUST CLEAN AND MAINTAIN THE FOLLOWING: INTERIOR BOTTOM OF FRYERS TO REMOVE GREASE, EXTERIOR SURFACES OF THE FRYERS AND WOK STATION, INTERIORS OF ALL REFRIGERATION UNITS AND FREEZERS.
FOUND NO BACKFLOW DEVICE AT THE ICE MACHINE OR THE UTILITY SINK IN THE BASEMENT; MUST PROVIDE. A BACKFLOW PREVENTION DEVICE SHALL BE LOCATED SO THAT IT MAY BE SERVICED AND MAINTAINED.
OBSERVED A HOLE IN THE CEILING OF THE BASEMENT NEAR THE DISHWASHER; INSTRUCTED TO SEAL HOLE IN THE CEILING.
OBSERVED THE FLOORS UNDERNEATH THE COOKING EQUIPMENT IN NEED OF CLEANING TO REMOVE FOOD PARTICLES AND GREASE; CLEAN AND MAINTAIN. OBSERVED THE WALLS AND PIPING ALONG THE WALLS AROUND AND BEHIND THE COOKING EQUIPMENT IN NEED OF CLEANING TO REMOVE GREASE OBSERVED; CLEAN AND MAINTAIN.
THE HOODED SYSTEM ABOVE THE COOKING EQUIPMENT NEEDS CLEANING TO REMOVE GREASE OBSERVED; CLEAN AND MAINTAIN.
INSTRUCTED THE PIC THAT ALL CITY OF CHICAGO FOOD SERVICE MANAGERS MUST OBTAIN THE REQUIRED FOOD ALLERGEN TRAINING CERTIFICATE.
