FOUND WASTE WATER SITTING AT SCRAPER SINK OF DISHMACHINE IN KITCHEN, WHICH WHEN DRAINED STARTED OOZING OUT AROUND THE GASKET SURROUNDING THE GREASE TRAP COVER. INSTRUCTED TO FIX & CLEAN DRAIN & TRAP. In food establishments, there shall be adequate sewage and waste water disposal facilities that comply with all the requirements of the plumbing section of the Municipal Code of Chicago.
ALL BULK FOOD CONTAINERS MUST BE LABELED. All food not stored in the original container shall be stored in properly labeled containers.
FOLLOWING NEED CLEANING: INTERIOR FLOORS OF COOLERS IN KITCHEN, INTERIOR PANEL OF ICE MACHINE AT BAR, DRAINS AT BAR SINKS, BOTTOM CABINETS OF PREP TABLES IN KITCHEN-DUE TO FOOD DEBRIS/DIRT. All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily.
FLOORS AT BAR AREA MUST BE KEPT DRY; ANY FLOOR TILE WITH POOR GROUTING MUST BE REPLACED. The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair.
OBSERVED MILDEW ON CAULKING AROUND THE DISHMACHINE SPLASH GUARDS-MUST REPLACE. The walls and ceilings shall be in good repair and easily cleaned.
