All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. MUST CLEAN AND MANTAIN THE FOLLOWING: ICE DISPENSING CHUTE AT SODA MACHINE ON FRONT COUNTER, NOZZLES AT SODA MACHINE, PREP TABLES, INTERIORS OF COOLERS, SHELVES IN COOLERS WHERE RUSTY OR ENCRUSTED WITH FOOD, FOOD STORAGE CONTAINERS.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. All utensils shall be thoroughly cleaned and sanitized after each usage. MUST CLEAN AND MAINTAIN THE FOLLOWING: CLEAN INTERIOR BOTTOMS OF FRYERS, EXTERIOR SURFACES OF FRYERS, HOT HOLDING UNITS, VENTS IN HOODED AREA ABOVE COOKING EQUIPMENT ETC.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. MUST THOUROUGHLY CLEAN FLOORS THROUGH OUT KITCHEN UNDER, AROUND AND BEHIND ALL EQUIPMENT INCLUDING REAR STORAGE SHELVES, WASHROOM AND WALK-IN COOLERS.
The walls and ceilings shall be in good repair and easily cleaned. MUST REPLACE ALL WATER STAINED AND DAMAGED CEILING TILES WHERE NEEDED IN KITCHEN AND DINING AREA. CLEAN WALL AROUND AND BEHIND KITCHEN EQUIPMENT.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. MUST CLEAN AND MAINTAIN MOP BUCKET; BUCKET VERY DIRTY INSIDE. MUST REPAIR LEAKING FAUCET NECK AT THREE COMPARTMENT SINK; LEAKING IN TWO DIFFERENT AREAS.
