All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. DETAIL CLEAN THE PREP COOLER, VENTILATION HOOD, EXTERIOR SIDES OF THE WALK-IN COOLER, LIGHT SHIELD IN REAR CORNER NEXT TO THE WALK-IN COOLER.
The walls and ceilings shall be in good repair and easily cleaned. MUST CAULK ABOVE THE BASEBOARD TILE BEHIND THE COOKING EQUIPMENT AND SEAL THE OPENINGS ON THE REAR WALL AND AROUND THE DRAIN PIPES AND THE REAR CORNER OF THE CEILING.
Toilet rooms shall be completely enclosed and shall be vented to the outside air or mechanically ventilated. MUST PROVIDE SELF-CLOSING DOOR DEVICES FOR THE RESTROOM DOORS.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. MUST PROVIDE A HANDLE FOR THE COLD WATER AT THE MOP SINK. MUST TIGHTEN THE DRAIN LINE BELOW THE 3 COMPARTMENT SINK.
