INSTRUCTED MANAGER MUST REPAIR AND MAINTAIN HIGH TEMPERATURE DISHMACHINE, FINAL RINSE TEMPERATURE MUST BE AT A MINIMAL 180 F AT FINAL RINSE GUAGE. INSTRUCTED MANAGER MUST TEMPORARILY WASH, RINSE AND SANITIZE ALL MULTI-USE UTENSILS INSIDE DISHWASH 3-COMPARTMENT SINK. PRIORITY VIOLATION 7-38-025.
OBSERVED ACCUMULATED FOOD DEBRIS ON LOWER SIDE OF DISHMACHINE DRAINBOARDS. MUST CLEAN AND MAINTAIN LOWER SIDE OF DISHMACHINE DRAINBOARDS.
OBSERVED ACCUMULATED FOOD/DIRT BUILD UP ON WALLS UNDER AND AROUND DISHMACHINE AND DRAINBOARDS ALSO OBSERVED DUST BUILD UP ON CEILING TILES ABOVE DISHMACHINE. MUST CLEAN WALLS/CEILING TILES THROUGHOUT DISHWASH AREA.
OBSERVED ONE BURNED OUT CEILING LIGHT BULB ABOVE DISHMACHINE. MUST REPLACE WITH WORKING LIGHT BULB.
FOOD ALLERGEN TRAINING CERTIFICATES HAVE EXPIRED. INSTRUCTED ALL CITY OF CHICAGO CERTIFIED FOOD MANAGERS MUST HAVE UPDATED FOOD ALLERGEN TRAINING CERTIFICATES.
