3-501.13: OBSERVED IMPROPER THAWING METHODS FOR TCS FOODS. FOUND PACKAGES OF PORK TENDERLOINS IN THE THREE-COMPARTMENT SINK WITH NOT WATER JUST A FEW ICE CUBES. INSTRUCTED TO USE PROPER THAWING METHODS SUCH AS PLACING FOOD IN THE WALK-IN COOLER OVERNIGHT, OR UNDER COLD RUNNING WATER.
6-201.11: OBSERVED A HOLE IN THE LOWER WALL BEHIND THE HOT WATER TANK IN THE HOT WATER TANK STORAGE CLOSET IN THE REAR. INSTRUCTED TO SEAL MENTIONED HOLE TO ELIMINATE POTENTIAL HARBORAGE POINTS FOR PEST.
2-102.13: OBSERVED NO ALLERGEN FROM THE FOOD MANAGER WITH THE SERVSAFE CERTIFICATE ON STIE AT THIS TIME. INSTRUCTED ALL FOOD MANAGERS MUST TAKE COURSE AND MAINTAIN RECORD ON SITE.
