Observed blocked exposed hand sink. At time of inspection exposed hand sink basin, near prep area was blocked by large cutting board and potato fry press. Observed dishes soaking over night in 3 compartment sink on bar side. Observed food debris in strainer of 3 compartment sink on cooking side. Must leave all surfaces clean and dry over night to prevent pest harborage. Must maintain same.

In food establishments, there shall be adequate sewage and waste water disposal facilities that comply with all the requirements of the plumbing section of the Municipal Code of Chicago. A plastic water line is connected to the sink spigot and runs 2 feet up to the top of an abrasion potato peeler with no backflow prevention device. The water line was disconnected at this time and the peeler is tagged held for inspection until connected to City plumbing and drains according to the Municipal Code of Chicago.
A certified food service manager must be present in all establishments at which potentially hazardous food is prepared or served. No valid proof of a certified manager is present at this time, have enough certified managers working to cover your hours of operation.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. The hood interior has some dusty greasy buildup inside, clean out the filters. The two door reach in cooler is dirty, clean the bottom of the cooler interior.
