FOUND TORN GASKETS ON THE WALK-IN COOLER DOOR. INSTRUCTED MANAGEMENT TO REPAIR BROKEN GASKETS AND MAINTAIN.
OBSERVED MILK CRATES BEING USED AS SHELVING THROUGHOUT THE ENTIRE FACILITY. MUST REMOVE CRATES FROM PREMISES AND PROVIDE SHELVING THAT IS FREE OF UNNECESSARY CREVICES AND DESIGNED/CONSTRUCTED TO BE EASILY CLEANABLE.
FOUND AN ACCUMULATION OF GREASE ON THE COOKING EQUIPMENT IN THE FRONT PREP AREA. FOUND A BUILD UP OF BLACK ENCRUSTED FOOD/DEBRIS INSIDE THE OVENS IN THE REAR PREP AREA. INSTRUCTED TO DETAIL CLEAN SAID EQUIPMENT AND MAINTAIN.
OBSERVED CLUTTER AND UNNECESARY ITEMS IN THE FRONT STORAGE AREA BEHIND THE BREAD DISPLAY CASES. MUST REMOVE CLUTTER, CELAN, AND REORGANIZE AREA.
FOUND MULTIPLE FOOD HANDLER CERTIFICATES EXPIRED. INSTRUCTED MANAGEMENT THAT ALL FOOD HANDLING EMPLOYEES MUST SHOW VALID PROOF OF TRAINING.
FOUND NO PROOF OF ALLERGEN TRAINING ON SITE FOR ALL CITY OF CHICAGO FOOD MANAGERS. INSTRUCTED MANAGEMENT THAT ALL CITY OF CHICAGO FOOD MANAGERS MUST COMPLETE ALLERGEN TRAINING AND KEEP CERTIFICATE ON SITE.
