MANAGEMENT VOLUNTARILY DISCARDED APPROXIMATELY 6 LBS OF CHICKEN AND 1.5 LBS OF STEAK VALUED AT A TOTAL OF $30. PRIORITY VIOLATION 7-38-005. CITATION ISSUED.
OBSERVED A 2 DOOR REFRIGERATOR ON THE WEST SIDE OF THE COOK LINE IN THE FIRST FLOOR KITCHEN CONTAINING TIME/TEMPERATURE CONTROL FOR SAFETY FOODS SUCH AS CHICKEN AND STEAK MAINTAINING AN IMPROPER AMBIENT TEMPERATURE BETWEEN 44.8 AND 46.4F. ALL ITEMS WERE REMOVED. COOLER TAGGED AND HELD FOR INSPECTION. INSTRUCTED TO REPAIR REFRIGERATOR SO THAT IT MAINTAINS AN AMBIENT TEMPERATURE AT OR BELOW 41F AND TO CONTACT CDPH BEFORE USING AGAIN.
