All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. REMOVE THE WOOD STORAGE SHELVES ABOVE THE 3 COMPARTMENT SINK AND PREP TABLES AND REPLACE WITH A MATERIAL THAT IS SMOOTH AND EASILY CLEANABLE. REMOVE THE CARDBOARD FROM THE BOTTOM SHELF OF THE PREP TABLE.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. DETAIL CLEAN THE GAS LINES BEHIND THE DEEP FRYER, TOP OF THE GREASE TRAP AT THE 3 COMPARTMENT SINK, VENTILATION FANS IN THE RESTROOMS, DUST ON THE SHELF ABOVE THE PREP COOLER.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. DETAIL CLEAN THE FLOOR IN THE PREP AREA ESPECIALLY IN THE CORNERS AND ALONG THE WALLS.
The walls and ceilings shall be in good repair and easily cleaned. DETAIL CLEAN THE GREASE ON THE WALLS BEHIND THE DEEP FRYER AND WOK STATION. DETAIL CLEAN THE WALL UNDER THE 3 COMPARTMENT SINK IN THE PREP AREA.
MUST PROVIDE A MOP SINK ON THE PREMISES.
REMOVE THE UNUSED ICE MACHINE FROM THE PREMISES.
Between uses and during storage ice dispensing utensils and ice receptacles shall be stored in a way that protects them from contamination. MUST STORE THE ICE SCOOP IN A CONTAINER OUTSIDE OF THE ICE MACHINE.
