The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. DETAIL CLEAN THE GREASE ON THE FLOOR UNDERNEATH THE WOK STATION AND DEEP FRYER AND AROUND THE GREASE TRAP BELOW THE 3C SINK.
The walls and ceilings shall be in good repair and easily cleaned. DETAIL CLEAN THE GREASE FROM THE WALL BEHIND THE DEEP FRYER.
