SINKS SHALL BE OF SUFFICIENT SIZE TO PERMIT COMPLETE IMMERSION OF THE UTENSILS TO BE WASHED, RINSED AND SANITIZED OR PROVIDE A COMMERCIAL TYPE DISH MACHINE WITH A RINSE SINK. (HIGH TEMPERATURE--MUST PROVIDE 180F OR ABOVE FOR FINAL RINSE WITH TEMPERATURE GAUGE, LOW TEMPERATURE--MUST PROVIDE 100PPM CHLORINE CONCENTRATION (CHEMICAL SANITIZER) OR 200 PPM (QUATERNARY AMMONIUM).
