OBSERVED IMPROPER COLD HOLDING TEMPERATURES OF TCS FOODS STORED OUT AT ROOM TEMPERATURE AND IN THE 3-DOOR PREP COOLER. OBSERVED OPENED COCKTAIL SAUCE AT 46F, SOUR CREAM AT 46F, AND OPENED TARTAR SAUCE AT 45F INSIDE OF THE 3-DOOR PREP COOLER. OBSERVED RANCH DRESSING AND BBQ SAUCE STORED AT 70F IN SOUFFLE CUPS IN THE FOOD PREP AREA OUTSIDE OF REFRIGERATION. LABELS ON CONTAINERS OF SAUCES AND SALAD DRESSINGS STATED "REFRIGERATE AFTER OPENING." MANAGEMENT INSTRUCTED TO MAINTAIN ALL COLD TCS FOODS BELOW 41F. PRIORITY VIOLATION 7-38-005. CITATION ISSUED.
OBSERVED THE 3-DOOR PREP COOLER WITH AN AIR TEMPERATURE OF 46F. THE COOLER WAS USED TO STORE TCS FOODS SUCH AS SOUR CREAM AND OPENED CONTAINERS OF SAUCES AND SALAD DRESSINGS. MANAGEMENT INSTRUCTED TO REPAIR AND MAINTAIN THE COOLER WITH AN AIR TEMPERATURE OF 41F AND BELOW. PRIORITY VIOLATION 7-38-005. CITATION ISSUED.
