OBSERVED THE SIDES OF THE COOKING EQUIPMENT WITH A BUILD UP OF DUST. CLEAN AND MAINTAIN THE TOP OF THE HOT COOKING UNIT. INSTRUCTED TO CLEAN AND MAINTAIN. ALSO REMOVE THE PROTECTIVE LINER FROM THE SIDE OF THE SMALL PREP FREEZER IN THE REAR NEXT TO THE MOP SINK.
OBSERVED THE FLOORS WITH A BUILD UP OF DIRT AND FOOD DEBRIS UNDER THE COOKING EQUIPMENT AND NON COOKING EQUIPMENT AND FOOD SPLATTER ON THE REAR WALL JUST LEFT OF THE ONE DOOR REACH IN UNIT. INSTRUCTED TO CLEAN AND MAINTAIN.
OBSERVED THE HOOD VENTILATION FILTERS WITH A BUILD UP OF GREASE AND DUST. INSTRUCTED TO CLEAN AND MAINTAIN.
