Observed several cooked pasta's in prep cooler being covered with wet white linen napkins that has dirt stains, dingy and grey in color from not being cleaned. Instructed manager that all foods must be protected at all times and must remove linen napkins from foods. Serious citation issued 7-38-005(A).
Evidence of rodent activity found on premises. Observed rat dropping behind counter in bar area-approximately 10 dropping and in right corner approximately 5 droppings. Instructed to remove all evidence and detail clean areas. Serious citation issued 7-38-020.
