Any open cans of food must be transferred into regular containers. All food stored in coolers must be dated & labeled.
All clean single service utensils must be stored with handles up.
Sides of hot cooking equipments,hood/filters above the deep fryer,kitchen storage shelvings,bottoms of food prep tables,fan covers inside the walk-in-cooler require a detail cleaning.
Floor under equipment and along wallbase not cleaned. Instructed to detail clean daily and remove food debris.Remove soiled cardboard liners from the premises.
Clean and maintain the walls and ceilings in the kitchen areas so they are smooth and sanitary from top to bottom.
