Clean and sanitize inside microwave and WIC/WIF shelves & clean dish shelves.
Date mark all food held over one day.
Many fruit flies at bar.
Cover all food in WICs. Close food and spice containers when not in-use.
Invert all utensils and ice buckets not already covered.
Provide light shields.
Replace damaged/soiled ceiling tiles.
Label all bulk containers (flour, sugar).
Clean all walls & floors, under & behind equipment and A/C vents.
