PASS 12 violations
Maintain hot holding at 135 F or higher.
All employees must have Food Handler Certificates.
Date mark all food held over 24 hrs.
Provide paper towels at all hand sinks.
Provide Chlorine test strips.
Do not not use cardboard or wood. (cardboard shelf liners, wooden storage shelves in WIC)
Store food 6 inches off floor.
Replace damaged gaskets.
Label all bulk containers (flour/sugar)
Clean all WICs: fans, shelves, gaskets. Clean A/C vents and bread cooling fans.
Clean up trash in warehouse and storage areas.
Replace ceiling tiles, repair damaged walls and wall tiles
