Observed potentially hazardous foods stored in the walk in cooler at improper temperature. Chicken mixture, weight 40lbs, at a value of $40. Temperature of the chicken mixture was 74.2 degrees. Manager voluntarily denatured and discarded product. Instructed manager to ensure that potentially hazardous foods need to be stored at 40 degrees for cold foods and 140 degrees for hot foods.
