All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. Dusty fan guards of most coolers (W.I.C./R.I.C.) need cleaning.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Floores in bsmt dry storage rooms, under W.I.C. shelves (first floor) & under handsink at ice cream area must be free of debris/dirt.
The walls and ceilings shall be in good repair and easily cleaned. Walls behind ovens/toaster at front prep area must be kept clean.
