Observed turkey at (55.8 F). Cold holding temperature for food must be 41 F or lower
Date mark all items in cooler. Food should remain in cooler for only 7 days (1st day is the prep date, includes open products or sliced fruits and vegetables)
Invert ice scooper to prevent contamination
